Ingredients:
- 70grms of firm tofu
- 30grms of carrot
- 1 tablespoon of cold pressed oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 small onion, finely chopped
- 1 carrot, grated
- 1 red bell pepper, finely chopped
- 1/2 cup chopped mushrooms
- Salt and pepper to taste
- 1/4 cup chopped green onions (for garnish)
- Fresh coriander leaves (for garnish)
- Lettuce leaves (such as butter lettuce or iceberg lettuce) for wrapping
Instructions:
- Drain and press the tofu to remove excess water. Slice the tofu into small cubes or crumble it into smaller pieces.
- Heat oil in a large pan or wok over medium heat. Add minced garlic and grated ginger, and sauté until fragrant.
- Add chopped onion, grated carrot, red bell pepper, and chopped mushrooms to the pan Stir-fry for a few minutes until the vegetables are slightly tender.
- Push the vegetables to one side of the pan and add the marinated tofu to the other side. Cook the tofu for a few minutes until it is heated through and slightly browned.
- Stir everything together in the pan and season with salt and pepper to taste.
- Remove the pan from the heat. Take a lettuce leaf and spoon a portion of the tofu and vegetable mixture into the center of the leaf.
- Garnish with chopped onions and fresh coriander leaves.
- Repeat the process with the remaining lettuce leaves and filling.
- Serve the tofu lettuce wraps as a healthy and flavorful appetizer or main dish.
