Ingredients:
- 1/2 cup dosa rice (red rice or brown rice )
- 1/4 cup whole urad dal (black gram)
- 1/4 cup tofu, crumbled
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chili, finely chopped (adjust to taste)
- 1/4 cup fresh coriander leaves, chopped
- 1/2 teaspoon cumin seeds
- Salt to taste
- Oil for cooking dosas
Instructions:
- Wash the dosa rice, black urad dal, under running water until the water runs clear. Soak them together in enough water for about 6-8 hours or overnight.
- Drain the soaked rice and dals and transfer them to a blender. Grind them to a smooth batter by adding water gradually. The consistency of the batter should be similar to regular dosa batter.
- Transfer the batter to a large bowl and add crumbled tofu, chopped onion, tomato, green chili, coriander leaves, cumin seeds, and salt. Mix everything well to combine.
- Heat a non-stick dosa tawa or skillet over medium heat. Once hot, pour a ladleful of the batter onto the center of the tawa and spread it in a circular motion to form a thin dosa.
- Drizzle a little oil around the edges of the dosa and cook it for a few minutes until the bottom turns golden brown.
- Flip the dosa using a spatula and cook the other side for another minute or until it is cooked through.
- Remove the dosa from the tawa and repeat the process with the remaining batter, adding oil as needed.
- Serve the tofu with vegetable chutney
