Ingredients:
- 15 grams Saffola plain oats
- 15 grams of diced carrots
- 15 grams chopped green beans (French beans)
- 10 grams green peas
- 10 grams finely chopped onion
- 1 teaspoon grated ginger or ginger garlic paste
- 1 green chili, chopped
- 5 to 6 finely chopped curry leaves
- 1 finely chopped tomato
- 1/4 teaspoon turmeric powder (haldi)
- 1/2 teaspoon mustard seeds
- 1 dry red chili, halved
- 4 dry roasted almonds
- 7 ml cold-pressed oil
- Salt, to taste
- A few coriander (dhania) leaves
Instructions:
- Heat oil in a heavy-bottomed pan and add the dry red chili and mustard seeds. Allow the mustard seeds to splutter.
- Add the finely chopped onion, green chili, grated ginger, and curry leaves. Sauté until they become soft and translucent.
- 3. Stir in the turmeric powder, salt, steamed vegetables, and finely chopped tomatoes. Sauté for about half a minute.
- Add the oats and mix well, ensuring all the ingredients are evenly combined. Cover the pan, reduce the heat to low, and allow it to steam for a few minutes.
- The moisture released from the tomatoes should be sufficient to cook the oats. If needed, add a few drops of warm water, being careful not to add too much and make the oats soggy.
- Garnish with fresh coriander leaves and roasted almonds.
- Serve the Vegetable Oats Upma while it's still hot.
