Ingredients:
- 1/2 cup flaxseeds
- 3teaspoon chana dal (split Bengal gram)
- 3teaspoon urad dal (split black gram)
- 10-12 dried red chilies
- 1 tablespoon cumin seeds
- 1 tablespoon coriander seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- 8-10 curry leaves
- 1/4 teaspoon asafetida (hing)
- Salt to taste
- 1 tablespoon oil
Instructions:
- Heat a pan over medium heat and dry roast the flaxseeds until they turn slightly golden and release a nutty aroma. Remove them from the pan and set aside.
- In the same pan, add the chana dal, urad dal, dried red chilies, cumin seeds, coriander seeds, mustard seeds, and fenugreek seeds. Dry roast them until the dals turn golden brown and fragrant. Remove from the pan and let them cool.
- In the same pan, heat the oil and add the curry leaves. Sauté them until they become crispy.
- Allow all the roasted ingredients to cool completely.
- In a blender or spice grinder, add the roasted flaxseeds, roasted dals and spices, salt, and asafoetida. Grind them into a coarse powder. Adjust the salt according to your taste.
- Let the Flaxseeds Karam Podi cool completely before transferring it to an airtight container.
- Serve the Flaxseeds Karam Podi as a condiment with idli, dosa, rice, or any other dish of your choice.
